"Jambalaya"...

Well, ~ a pirogue is a flat bottomed boat that you have to pole to get it to move, no oars, because the bayou water is very shallow. Sometimes outboard motors are used, but more often, airboats. File gumbo is, of course, a shrimp, sausage and vegetable stew. Chero-mio, = mi cherie, meaning in sorta French, dear one. Thibodeau and Fountaineau are famous Louisiana families. It's pronounced "Tib-a-doe". Fill fruit jar = get mighty drunk.
